1x 250g pouch SunRice brown basmati
rice in 90 seconds
250g chicken thigh fillets, diced
2tbspns vegetable oil
1 onion, sliced
1/2 red, 1/2 yellow capsicum, sliced
2tbspns mild Indian curry paste
½ cup chicken stock
2tspn raisins
Salt and pepper to taste
2tbspns toasted slivered almonds
- Place chicken and curry paste into a bowl, mix and set aside.
- Heat oil in a saucepan, sauté onion, add marinated chicken and stir-fry for a few minutes until chicken is golden brown.
- Add stock, raisins and capsicum and simmer for 2 minutes.
- Simply stir in SunRice brown basmati rice in 90 seconds pouch and season with salt and pepper to taste.
- Serve, garnished with slivered almonds.
